There is one aspect of the Bedford Village Inn’s philosophy that is absolutely rigid and inflexible: To use only the freshest indigenous ingredients in preparing the most exquisite New England regional cuisine. And because these ingredients change with the seasons, our menus also change frequently to take the best advantage of them.
Here are just a morsel or two to anticipate from the kitchens of the Bedford Village Inn: Sautéed double–breaded goat cheese, crispy on the outside, warm in the middle, stuffed with sweet apricots and pine nuts then drizzled with balsamic vinegar and nestled in Mesclun greens with fresh herbs. Then, for an unusual nutty flavor for a main course, savory grain remaining from the beer brewing process makes a specialty dumpling smothered with fresh prawn or lobster. Or perhaps a crisp seared duck brushed with an aged glaze of rum, vanilla beans, molasses and brown sugar. Well Seasoned Culinary & Hospitality Staff Jon Carnevale, Restaurant General Manager & Sommelier has been involved in the hospitality business for the past 10 years. He currently oversees all dining operations at the BVI and is a Certified Sommelier. His restaurant experience comes from his total involvement at the BVI where he works with his family at this Four Star restaurant and hotel. With his hospitality experience, knowledge and passion for food and wine, he has become the only Certified Sommelier in NH and one of few in New England. The Court of Master Sommeliers is the premier examining body for restaurant wine professionals and reaching the Certified status is quite an achievement. Jon has studied at Boston University and under Roger Dagorn, MS, from Chanterelle in New York City as well the Sommelier team at the Michelin 3 Star Restaurant, Jean George in New York City. Jon was selected by the State of NH Liquor Commission to assist in selecting the State’s first- ever private label wine and he has also been invited to be an instructor of wine studies at Southern NH University. Jon oversees the BVI wine list of over 725 selections, creating special menus for BVI guests and special events. Jon likes to see other people enjoy wine without the pretentiousness that sometimes is associated with wine appreciation. Peter Agostinelli, Executive Chef brings an impressive culinary background and enthusiastic appreciation that began around the family table with his Italian grandfather, who so influenced Agostinelli that at the young age of 13 his first job was at a small Italian restaurant in his hometown, and it was here that he realized his love of cooking. A Woburn native, Agostinelli’s culinary career began at Newbury College in Massachusetts where he earned his degree in Culinary Arts, which added dimension to his tremendous love of New England regional cuisine. After graduating in 1998, he began working for the Olives Group with renowned chef/owner, Todd English and within a short time he became the Executive Sous Chef of Figs at Chestnut Hill in Massachusetts. In 2005 he joined the Bedford Village Inn where he excelled in all of his positions to achieve the Executive Chef’s position. Peter has been an active culinary professional involving himself in various charitable and industry events. He now lives in Lowell, Massachusetts with his wife, Rita.
